We recently camped four nights along the Kentucky Adventure Trail (KAT).
Campsite on the Red River for the first two nights.If you’re going to tent camp below freezing, I can’t recommend a Mr. Heater, good thermal underwear and an appropriately rated sleeping bag enough. I pre-make and freeze many of our dinners to make it easier to have good, nutritious food at camp. We pop it in our travel fridge, and after a day or two, the meals are defrosted and ready to eat. On this trip, we had pineapple teriyaki meatballs with broccoli and rice, spaghetti with meat sauce, chili with rice, and beef stew (not pictured because it literally looked like baby food).Speaking of travel fridge, everything is pretty self-contained on the 4Runner. The back swings out and we have a shelf that drops down so we can put our camp stove on it and hook it right up to the propane tank. The stove tucks away into a drawer when not in use.Finally, let’s talk scenery, because Kentucky was quite pretty.
